Position: Sushi Chef
Reports to: Head Chef
Employment Type: Full-time
Key Resposabilities:
-Prepare and produce sushi menu items (nigiri, sashimi, maki, and basic specialty rolls) to the required standard
-Assist in the preparation of sushi rice, including washing, cooking, seasoning, and maintaining correct holding conditions
-Carry out fish preparation tasks including trimming, slicing, and portioning under supervision
-Follow recipes, portion sizes, and presentation guidelines to ensure consistency across all dishes
-Ensure mise en place is completed for the sushi section before service and maintained throughout
-Maintain cleanliness and organisation of the sushi counter and prep areas at all times
-Ensure all ingredients are stored, labelled, and rotated correctly (FIFO), including date labelling
-Support the team in monitoring food quality, freshness, and presentation standards
-Assist in checking deliveries and reporting any quality issues to senior chefs
-Minimise food wastage and follow correct procedures for recording waste where required
-Work efficiently during service, maintaining speed without compromising quality
-Communicate clearly with senior chefs and team members during service
-Follow all food safety procedures, particularly in handling raw fish and ready-to-eat products
-Support stock organisation and assist with stocktakes when required
-Participate in training and development to improve sushi skills, knife techniques, and product knowledge
General:
-Maintain a professional and positive working relationship with all team members and suppliers
-Deliver a high standard of service, ensuring efficiency, consistency, and attention to detail
-Have a strong understanding of kitchen operations and adapt to changes in service requirements
-Support onboarding and training of new team members
-Maintain high standards of personal presentation and punctuality
-Undertake any additional reasonable duties as requested by management
Requirements:
Proven experience as a Sushi Chef
Excellent knowledge of Japanese cuisine
Ability to work under pressure in a fast-paced environment.
Professional appearance and positive attitude.
